Cheezy Kale Chips [Vegan]

I was once told “this snack could change the world.” Why? Because the delicous concoction of flavors melts into your mouth and the depth of your soul. Forget the notion that healthy food should taste like cardboard. These kale chips are the living bomb.

Ingredients

Hemp Nacho Cheez

  • 1 cup shelled hemp seeds (also called hemp hearts)
  • ⅓ cup water
  • 1 red bell pepper, seeded and chopped
  • 1 clove garlic
  • 2½ tablespoons nutritional yeast flakes
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon chili powder
  • 2 teaspoons soy sauce or wheat-free tamari (for gluten-free; can sub coconut aminos for soy-free)
  • ½ teaspoon Himalayan crystal salt or sea salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne
  • ⅛ teaspoon ground turmeric

Kale Chips

  • 4 cups of washed and rinsed dinosaur kale 

Instructions

  1. In a high-speed blender, such as the Vita-Mix, combine all nacho cheez ingredients until the mixture is smooth and creamy (2-3 minutes). Use a plunger or add more water to thin the cheese and make it easier to blend. 
  2. After rinsing your kale, de-stem and then tear the leaves into palm-sized pieces. 
  3. In a large bowl, combine all ingredients, giving special attention to rubbing the cheez into the folds and crevasses of the kale
  4. Transfer the cheez-covered kale onto dehydrator trays. Dehydrate 6 hours at 118 degrees F. or until the chips are fully dried and crunchy. 
  5. Store in an air-tight container and eat within 2-3 days.
