How is August treating you? It seems like 2020 has been a whirlwind of lessons and allowing… and I’m honestly so surprised fall is pretty much here! On that note, our wedding is exactly ONE week away (eek!) and although I’m nervous about having it during prime COVID time, it will be entirely outdoors and only a medium group of friends and family will be coming. Plus, we will have masks and hand sanitizer available and the sun will be shining. So, the party will go on.

In addition, I and everyone I know need an excuse to let loose. At some point, the negativity has to stop and we need to remember why we came here: to re-learn and share love as the highest expression of Spirit and to support the positive expansion of the planet. By celebrating love, indulging in plant-based food (omg, our cake is gluten-free AND vegan – I will share pics, you know it), we are doing just that.
But negative news aside, there are so many reasons to be grateful right now. We are living through one of the most important moments in history where we are each being forced to gain clarity on our own behalf and the behalf of the planet. We are being asked to wake up and step up in big ways… and the choices we make today will have rippling effects in the future.
We are living in a time of oppression, manipulation, and inauthenticity… and those who are rebelling against the narrative of what “humans” should be are doing an incredible job of disrupting negative trajectories. It is an incredible time to be alive, and we all need to take care of ourselves in order to grow stronger and keep up.
One way you can nourish yourself is to whip up a batch of these low-glycemic almond flour cookies. They are super yum and are made with whole food ingredients. Sure, don’t have these for breakfast, lunch, and dinner. But treat yourself when you need a lil pick-me-up, and remind yourself why you are worth the investment of energy (to be healthy and happy for years to come)! I love you all.



Almond Flour Chocolate Chip Cookies [GF, Paleo]
Delicious and easy-to-make cookies that are low-glycemic.

Ingredients
- 1/2 cup organic ghee (can sub coconut oil)
- 1/4 cup coconut oil
- 3/4 cup coconut sugar (low-glycemic)
- 2 tsp vanilla extract
- 2 large organic eggs*
- 1/2 tsp baking soda
- 1/2 tsp sea salt
- 3 cups blanched almond flour
- 1 1/4 cups chocolate chips (I love Lily’s brand)
Instructions
- Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
- In the bowl of a stand mixer, cream together the ghee, coconut oil, and brown sugar. Add the vanilla and eggs, mixing until incorporated.
- Mix in the baking soda and salt. Add the almond flour, 1 cup at a time, beating well after each addition. Fold in the chocolate chips with a wooden spoon.
- Form the dough into tablespoon rounds and place them on the lined baking sheet about 3 inches apart. Bake for 11-13 minutes, or until golden brown around edges. Cool and enjoy!
