Hey there!
Did you see that Dave the Raw Food Trucker came to visit in Phoenix and Sedona (for the Raw Living Expo!) and to speak at the Pomegranate Café? Being a chef at the Pomegranate, I get the awesome opportunity to not only meet and document the great speakers and passerby’s (like Loren Lockman) but to create the delicious food as well!
For Dave’s visit, we served a few different raw vegan dishes.
Tacos Vivos have a walnut meat, pico de gaio, baja aoli sauce, lettuce, and are topped with avocado in a cabbage shell. They are always served with a side kale salad (massaged kale in a marinade + lettuce, carrots, sunflower seeds, beets, tomato, and a raw ceasar dressing).
Rainbow Wraps have our famous almond cheese + tomato, bell pepper, cucumbers, avocado, carrots, and cabbage rolled in collard leafs with a side of ceasar dressing and a kale salad.
AZ Rolls have all the same ingredients as the Rainbow wraps (except the tomato) and are served with a lettuce + carrot + cabbage slaw with our famous Miso Dressing.

And my special I created for the event was…
Raw Truck-Stop Special! Soup & Sandwich
Hearty Sandwich:
Onion Bread + Marinated Mushrooms + Cheesy Sauce Drizzled + tomato, cucumber, onion, greens, and avocado (Um, Drool)
+ Creamy Tomato-Basil Soup
The recipe for that is below! It may seem like a lot of ingredients, but I’m somewhat of a perfectionist when I create raw food so I’ll add just little pinches here and there of spices and herbs because I have access. I’ll have to share the sandwich in a future post!
Also – This is doubled to create a larger quantity. If you don’t want that much – divide it by 2 then make it!
Ingredients:
2 Cups Water
2 Celery Ribs
7 Tomatoes
6 Sun-dried Tomatoes
1/4 Cup Pine Nuts
2 Cloves Garlic
2 tbsp Extra Virgin Olive oil
2 Cups Basil (or more if you looove Basil like me!)
2 tsp sea salt
2 1/2 tsp Paprika
1 1/2 Tbsp Lemon Juice
1/8 tsp Cayenne
2 tsp Thyme
1/4 tsp Chipotle
1/2 tsp Braggs Amino Acids
1 tsp Nutritional yeast
Directions:
1) In a blender, combine all ingredients and blend on high until completely smooth and creamy!
2) If you have a Vita-Mix, let blend for 2-3 (or even 4!) minutes until it’s warm but not too hot.
3) Serve, Enjoy, and/or save leftovers in a air-tight container… if they last that long!
Plated with two orange slices and some wonderful, local sprouts – this dish was a hit!
Try this out – You’ll NEVER feel like you’re missing any cooked soup. Another hint** if you use a vita-mix, you can run this in the blender for a few minutes and it will become warmish/hot (but don’t go too long so you don’t kill the enzymes).
