I don’t know about you, but I am such a kale addict I happily eat the leafy green vegetable as often as I can. That usually means in the form of kale chips – just being honest! And oooooh my friend, if you have not yet indulged in the wonder that is the kale chip, I am going to introduce you.

 

First, I’ve shared before the Buffalo Kale Chip, the World’s Best Cheezy Kale Chip, and also the Ranch Kale Chip… but now I’m posting a super simple recipe that everyone can make because sometimes we just need a quick go-to.

But just because it’s simple does not mean it is not delicious!

 

PS – This kale chip is the perfect alternative to buttery, salty popcorn in the evening with your hubby. Trust me on that. If you set aside 10-15 minutes and a few hours of dehydrating time, you will be thanking yourself over and over. And do you see the ingredients below? All three offer their own health benefits – therefore in addition to kale, this is a superfood snack you really can’t get enough of.

Let’s recap on the benefits:

Kale is in the same family as cabbage, broccoli, and cauliflower. It boasts a ton of nutrients, including vitamins A, C, K, and calcium. Kale is also rich in antioxidants and is a great source of fiber.

Coconut oil contains medium-chain triglyceride fats which feed your brain and is converted into quick energy, helps increase energy, is known to help decrease weight naturally, can be used as a natural moisturizer and hair conditioner, is useful for oil pulling practices, and also has the highest heat temperature (450F, I believe) if you do decide to cook with it. But as you can see above, Nutiva is a great brand to use when raw. Make sure yours is unrefined and cold-processed for optimal benefit. 

Apple Cider Vinegar is antimicrobial, helps build up digestive HCL acid (underactive stomach being an epidemic leading to digestive ails), helps to balance blood sugar, is a good source of beneficial probiotics, and has even been shown to benefit cancer (Livestrong). 

Sea Salt boosts the immune system, offers 85+ minerals, is alkalizing, can be used to boost weight loss because it stimulates digestive juices needed to optimally break-down and utilize foods, strengthens bones, decreases muscle spasms because of its potassium content, aids depression, and even helps to neutralize energy when used in baths.

Super Easy & Delish Kale Chips! {Raw, Vegan}

Ingredients

  • 3 Bunches Kale, torn into palm-sized pieces

  • 3 Tbsp Coconut Oil

  • 2 tsp Apple Cider Vinegar

  • 1 1/2 tsp Sea Salt

  • Optional: 1/2 tsp Cayenne

Instructions

  1. Place washed palm-sized pieces of kale in a large bowl, add remaining ingredients, and massage into the crevasses using your hands. (2-3 minutes)
  2. Place on the mesh sheet of two dehydrator trays and dehydrated for 4-5 hours at 115 degrees F. If not crispy, dehydrate 1-2 hours (depending on the humidity in your area).
  3. Take your lovely, buttery-tasting kale chips out of the dehydrator and store them in an air-tight container for up to 2 weeks (if they even last that long).
