Vegan tomato soup, anyone? This entree or side dish is a winner, especially on cold, blustery days.
As I write this, I’m feeling guided to slow down and simply enjoy some of life’s simple and comforting pleasures. Why? Because, my friend, I sprained the shit out of my ACL and tore some ligaments playing soccer. With my mom currently experiencing lockjaw, we are a sorry pair and have been nomming on this soup for sustenance.
Fortunately, it is both delicious and easy-to-make. Seriously, try it for yourself.
Healthy Homemade Tomato Soup [Dairy-Free]
This delicious and easy-to-make soup will warm your soul even on the coldest of nights.

Ingredients
- 2 cans organic diced tomatoes
- 1 (4) oz can of coconut cream or 1/3 cup coconut milk
- 1/2–1 Tbsp sea salt
- Dash of apple cider vinegar or lemon juice
- 1 clove garlic
- 1 1/2 Tbsp Oregano
- 1 tsp basil
Instructions
Blend all ingredients in a blender
Heat over the stove in a medium-sized pan
Store leftovers in an airtight container in the fridge
