Hey, beautiful!

I hope your Halloween has been spooktacular (I’m sorry, I couldn’t help myself) and you’re enjoying the Fall bounty of root vegetables and more!

Today is the day! Well, tomorrow actually. I’m presently in Denver with my mom and niece, and we spent the gorgeous day touring Boulder, Colorado (where, you may or may not know, I spent six months living earlier this year).

I absolutely adore Boulder. In fact, I even wrote it a love letter. You can check it out here.

Pearl Street Mall is one of the nation's most successful outdoor malls and one of Boulder’s most notable landmarks and attractions. Stroll down the tree lined, brick walkway, filled with an array of shops, boutiques, galleries, patio cafes and restaurants. Street musicians and jugglers often perform during the day and at night.

We toured the Farmer’s Market, went to the humungous Whole Foods, and spent an eventful evening running errands and making healthy food in the hotel. Tomorrow I fly to Bali and part once again with the family.

All is well, however, and I am excited for the upcoming journey. Mainly, because I really hope to use the extra space, time, inspiration, and tropical abundance to share more plant-based raw vegan recipes that are overflowing with flavor and love.

I feel my best when consuming a high fruit and vegetable diet, so am going to be doing a lot of personal work (cleansing, detoxing) and Bloom-inspired work (creating menu plans and such) so lovely individuals like yourself can make food your medicine, too. It will be fun.

Today, to honor Halloween, I’m sharing a pumpkin pie smoothie that is oh so good. Yes, it’s cliche to make a smoothie with pumpkin, when everyone has spent the last week or so gutting many pumpkins and trying to figure out how to use the innards… But if now isn’t the perfect time to share it, I don’t know when is! <3

Note: I listed this as a “raw vegan” smoothie though it does use 1/2 cup of cooked pumpkin puree (by the way, fresh baked will always trump anything from a can). You can omit the pumpkin if you desire, but it is an incredibly nutrient-dense food which digests better when cooked and makes this smoothie come to life. Your choice! <3
