Caramel Apple Cheesecake

2/3 Cup Almonds
1/4 Cup Pitted Dates
1/8 Cup dried Coconut
3 Tbsp finely chopped, packed dried apples
1/8 – 1/4 tsp cinnamon
1/2 tsp Vanilla (Alcohol-free)


2 Cups peeled, diced apples
3/4 Cup Cashews
3 Tbsp Maple Syrup
1 tsp Lemon Juice
1 tsp Vanilla Extact
5 Tbsp Coconut Oil
Dash of Sea Salt

Caramel Sauce:

8 Medjool Dates
1 Tbsp Raw Coconut Butter
1/3 Cup + 1 Tbsp Maple Syrup
1 1/2 tsp Vanilla Extract
2-4 Tbsp Date soak water
2-3 Apples, diced medium-size






1) In a food processor, grind almonds until a flour. Add remaining ingredients and pulse until a sticky texture is obtained.
2) In a cheesecake pan, sprinkle some dried coconut then press your crust evenly on top.
3) In a high-speed blender, combine all ingredients until smooth and creamy. Add a dash of water if needed for ease of blending.
4) Pour on top of your crust. Decorate with thinly sliced apples, chopped walnuts, and cinnamon.
5) Freeze for 3-4 hours. When you are ready to serve, create your raw caramel sauce by blending all ingredients in a high-speed blender until smooth.
6) After you dice your apples, mix a little of caramel sauce with the fruit and drizzle on top of your cheesecake slices.
