Hello lovely friends!
This recipe for Raw Cucumber Noodles with Tzatziki Sauce is just too outrageous not to share! The original recipe I created is being saved for a very special project coming up (hint: it’s low-fat and light!)…but here’s another version that is just as yummy and delicious!

Please enjoy! You will need a spiralizer to create Cucumber or Zucchini noodles (a well worth-it investment), and a blender to create your creamy sauce.

Serving Size: 1-2
Preparation Time: 10-15 minutes

Ingredients:

2-3 Cucumbers, Spiralized with large noodle size
1/2 Cup Zucchini, diced
1/.2 Cup Cashews, soaked for 2-4 hours
1/4 Cup of Water
1 Tbsp dried Dill or 1/2 Cup fresh
1 Tbsp of Olive Oil
2 Tbsp of Lemon Juice, about 1/2 Lemon
3 Garlic cloves
dash of salt
(Optional): fresh Parsley and chopped onions for garnish

Directions:

1) Spiralize Cucumber into noodles and place in a medium-sized bowl.
2) In a high-speed blender, combine all remaining ingredients and blend on high until smooth and creamy.

**Tip!** If you use 1/2 Zucchini with recipes that require a lot of nuts and seeds, you can maintain the creamy taste and consistency without the extra fat!

3) Pour your delectable sauce over your cucumber noodles. Top with Parsley, onions, and/or any extra Dill you desire. Enjoy!
