An ode to salads:
Crunchy, vibrant, rainbow-hued.
Your benefits abound – oh how I love you.
With a different type of dressing,
every. single. day.
I could never – ever! – tire of you,
and you, nor of me.
How many of you are still with me? Awesome.
That’s right – salads are incredible mains (the real dinner prize!) that allow one to consume a plethora of nutrients, vitamins, minerals, and live food energy in a tasty way.
All one needs is a dressing! (Check out archived dressings from previous recipes here)
Because I love you all and want you to have yummy, nourishing fare to keep you vibrant and light, here’s another delicious salad dressing to get you through the night. (Oh, I don’t think the rhyming stopped).
- 1 cup packed avocado flesh (2 small)
- 7-8 tbsp water
- 1 garlic clove
- 5 tbsp apple cider vinegar*
- 3-4 tbsp fresh lemon juice, to taste
- 1/4 cup extra virgin olive oil
- 1/2 cup packed fresh basil leaves
- 1/2 cup packed fresh parsley
- 1/2 cup packed green onion (dark green part only, not white)
- 1 tsp sea salt, or to taste
- Pinch of cayenne (optional)
- Sweetener, to taste (1/2 tsp agave or 1/2 date)
- In a high-speed blender, combine all ingredients on high until smooth and creamy.
- Store in an air-tight jar for 4-5 days (if it lasts that long!)
- You can use this dressing on crackers, vegetables, salads, and other imaginable food items!

- [b]*Note*[/b] Due to the ACV and Lemon, it has a bit of a kick. If you don’t like as much tangy flavor, cut down on the amounts listed.
