I am officially back in the States. Traveling for over 40 hours, it has taken me a couple of days to sync back up to this side of the world, but am ready to begin dishing out new recipes, sharing services, and publishing new menu plans and recipe guides for y’all. 😉

Today I want to share with you a special soup recipe. Raw soups in general are staples for me, as they are bursting with nutrition, taste amazing, and help me glow from the inside out.

I’m sure once you try this super yummy creamy mushrooms & avocado soup, you’ll love it too.

{Raw, Vegan} Mushroom & Avocado Soup (with Miso)

Ingredients:

1 Portobello Mushroom

3 Shitake Mushrooms

1/2 Avocado

1-2 Tbsp Miso

2 Cups Hot Water

3 Dates (optional)

1 tsp Walnut Oil (optional)

Garnish:

3 Sliced Shitake Mushrooms, marinated in Nama Shoyu for a few minutes

Salt & Pepper

1/4 Cup Fresh Cilantro

 

Directions:

1) Blend all ingredients until smooth and adjust according to taste.

2) Pour into bowls and top with mushrooms, cilantro, and sprinkle on salt and pepper (if desired).
