While I was always a “Miracle Whip” kind of gal, the name does not excuse the unhealthy ingredients found in these conventional condiments. This is why without getting into the nasties of the tasty condiment, I am posting this super easy and delicious vegan mayonnaise you can whip up to use in recipes… (Keep your eyes out – a chickpea salad is on its way!)

Easy Vegan Mayonnaise

Creamy, satisfying, and ultimately healthy “mayo” from cashews.

Ingredients

Scale

3/4 Cup Water
1 1/2 Cup Cashews or Macadamia Nuts
3 Tbsp Olive Oil
2 Tbsp Apple Cider Vinegar
1/8 tsp Mustard Seeds (Optional)
1/2 tsp Sea Salt
1 Pinch of Cayenne Pepper

Instructions

1) In a high-speed blender or Vita-Mix, combine all ingredients on high until smooth in creamy.
2) Transfer to an air-tight jar or container. Will keep up to 10 days in the fridge.
