Blessings to you and your family. I have just one week left in Africa, and I’m using my remaining time to put together an AMAZING Bloom for Life Cookbook (with 80+ recipes and a 2-week menu plan), as well as teach students nutrition and whole food cooking at the Organics4Orphans school.

Time has flown, but I am so happy to be returning to the United States. My time in Bali, Africa, and Thailand these past six months has reminded me just how important family is, even though traveling may be exciting and fun.

When I’m back in the U.S., I intend to continue my studies and help people in the Black Hills heal holistically. This next chapter should be a blast. 🙂

By June, my cookbook should be available as a PDF and in print, and one of the recipes that will be featured is this super delicious Apple Cinnamon oatmeal.

It’s a staple I’ve taught people to make here in Kenya (as it’s nutritious and affordable), and it’s one we all can benefit from no matter where we are. (PS – Apples and cinnamon are one of my FAVORITE combinations)

To ensure this recipe is gluten-free, make sure you use gluten-free oats. I also recommend using a plant-based milk, such as almond or hemp, to make this breakfast or snack recipe creamy and even more nutritious.

CinnamonOatmeal

Cinnamon-Fruit Oatmeal {Vegan, Low-Glycemic}

Preparation Time: 10 Minutes

Serving Size: 2

Ingredients:

1 cup Water

1 tsp Vanilla Extract

1/4 tsp Cinnamon

1/2 cup Old Fashioned Rolled Oats (not instant/quick oats)

1/2 cup Fresh Fruit (bananas, mango, etc…)

2 Apples, peeled, cored and diced

2 tbsp chopped Walnuts (optional)

1 tbsp ground Flax Seed (optional)

1/4 cup Raisins (optional)

Directions:

  1. In a medium saucepan add the water, vanilla, and cinnamon. Bring to a boil.
  2. Add oats and reduce heat to a simmer and cook for about 5 minutes.
  3. When the oats are soft add the fruit (bananas, mango, etc…) and stir in. Continue cooking until heated through.
  4. Remove from heat. Cover and let stand 15 minutes until thick.
  5. Mix in the apples, walnuts, flax and raisins.
  6. Serve.
