This recipe is long overdue. Unfortunately I did not make them for the Café like I mentioned we planned earlier. However, the folks of Sturgis, SD thought these were phenomenal, and they’re the type of people who think vegan = yucky.
Be Amazed. Somewhat work intensive – but oh boy, they’re worth it.
Yield: A lot. Like, 15-20 Rolls at least.
Prep Time: 1 Hour + Dehydrating time + Prepare & clean up (30 minutes – 1 hour)
Ingredients:
Basic Wrap-
1 Cup of Dates
½ Cup of Water
1 Cup Almonds
2 ½ Bananas
1 tsp vanilla
1 ½ Cup Sprouted Buckwheat
Dash of Salt
(Split into 3 Parts)
Vanilla:
1 ½ tsp vanilla (alcohol free)
Dash Cardamom
Strawberry:
¾ Cup Strawberries
2 tbsp Xylitol, Stevia, or 1 tbsp Agave Nectar
Chocolate:
2 Tbsp Raw Cacao Powder
1 Tbsp Raw Carob Powder
1 Tbsp of Xylitol/Stevia or ½ Tbsp Agave Nectar
Fillings!
**Prepare ¼ Cup of Soaked Irish Moss Beforehand – you will use it for Vanilla & Chocolate**
Vanilla Whipped Topping:
½ Cup Irish Moss
2 tsp Vanilla (alcohol free)
2 Tbsp Coconut Oil
1/8 Cup of Cashews
¼ Cup Xylitol/Stevia/or Agave Nectar
Dash of salt
Chocolate Drizzle Sauce:
2 Tbsp Raw Cacao Powder
2 Tbsp of Coconut Oil
¼ Cup Irish Moss
1-2 Tbsp Agave Nectar
Dash of salt
½ tsp vanilla (alcohol free)
Strawberry-Fig Jam:
¼ Cup strawberries
¼ Cup soaked Figs
**This is my favorite jam recipe ever! It tastes like the original, is so easy to make, and is delicious!**
Directions:
1) In a high-speed blender, combine all basic wrap ingredients and blend until smooth and it has a dough-like consistency.
2) Split into 3 parts (keep one part in the blender). Start with Vanilla – add the cardamom and alcohol-free vanilla extract. Blend until smooth.
3) On an Excalibur dehydrator tray with a teflex sheet, gently smooth evenly into a square.
4) Repeat the steps with both the Strawberry & Chocolate Parts. You should now have 3 dehydrator trays – vanilla, strawberry, and chocolate. Dehydrate for at least 8-12 hours.
5) After the trays have dehydrated overnight, flip them gently and let them continue to dry out – but NOT get crispy. You want them malleable enough to roll.
6) **Note- make Irish Moss before you create the fillings** In a high-speed blender, combine ingredients for vanilla filling and blend until you get a ‘whipped topping’ that is fluffy & delicious. Put in a bowl and set aside.
7) After rinsing your blender, combine ingredients for your chocolate sauce/pudding. Blend until smooth & deliciously creamy. Put in a bowl and set aside.
8) Combine Strawberry Jam ingredients in a blender, and blend until thoroughly mixed. It should look and taste just like Jam. Put in a bowl and set aside.
9) Score/Cut each tray into long strips – no longer than 1 – 1 ½ inches wide. In the strawberry wrap – lightly glaze the inside with the chocolate sauce. Nicely roll it like a cinnamon bun.
10) In a vanilla strip – put the strawberry jam to coat the inside, and like the strawberry roll, easily roll it like a cinnamon bun.
11) Finally – in the chocolate wrap – use the vanilla whipped topping and coat the inside – then roll it lightly like a cinnamon bun.
You now have the most delicious little dessert trio. It may have been a bit of work – but they’re SO Delicious! Mix and match the fillings – drizzle with your favorite dessert sauce – and share this recipe! I hope you enjoy it as much as I loved creating it. 😉

Sigh….I have no dehydrator. Maybe I could leave them out in the sun all day!? Any better ideas?
No worries! They won’t be all raw – but you won’t be missing out on a lot of nutrients if you spread them onto parchment paper and bake at a really low temperature (some even leave their oven door open, but that’s somewhat extra energy being used). Just keep an eye on them and then you can take them out and roll ’em up!
If you don’t want to make the fillings – they even taste like a mixture between banana bread and a fruit roll-up. Fun snack!
