Everyone loves salad, right? Well this dressing will certainly make it that way! I created this yummy dressing for the latest dinner at Finca de Vida: sprouted buckwheat pizza,but with my marinated and dehydrated veggies, feta ‘cheese’ (raw and vegan), and raw and vegan pepperoni. (Yes, you heard that right…droool).

Then I turned the leftovers into crackers! How fun! That’s the coolest thing about raw foods, so many ways to use nature’s most medicinal foods!
Anyways, Miso can be created from fermented legumes of any kinds, but most often is made from soybeans. Fermented, it’s full of beneficial bacteria, is known to decrease the incidence of Breast Cancer (Japanese and their seaweed/miso dishes!), also is rich in Iron, zinc, manganese, and anti-oxidants. What better way to use it than in a yummy salad dressing?

Orange Miso Salad Dressing:

Ingredients:miso
1 Tbsp Miso
1/2 Cup Fresh-squeezed Orange Juice
2 Cloves Garlic
4-5 Tbsp Olive Oil
1/4 Cup Cashews (Optional for creaminess)
Agave Nectar or Raw Honey to taste
 
Directions:
1) Blend all ingredients in a high-speed blender until smooth and creamy!
2) Serve over your choice of greens and vegetables, making sure to give thanks to the Earth for your bountiful food and all its wonderful, nutritious blessings!
