Hola, Buenos Dias! Okay, that’s about the limit of my Spanish. (I know, and I’m in Costa Rica!). Well, the one thing I am thankful for is that food has its own language…and no matter what one’s predominant dialect is, they can always be wowed with some delicious and healthy raw food cuisine.
In this case, here at Finca De Vida we celebrated yet another amazing day with some raw Pizza de Costa Rica. (De = of …good job on that Spanish!) Sometimes these recipes can be a little work intensive, but in my opinion they’re definitely worth it. I’ve never had less than an A+ rating by guests – some of who have been here over a month! Plus…you can make lists of the health benefits when eating this yummy pizza compared to the Standard processed and dead version.

I even made some RAW BURRITOS complete with Heart of Palm Rice, Refried ‘Beans’, Irish Moss based Cheese Sauce, Guacamole, and a festive Salsa!heartofpalmrice

And of course every 3-course dinner needs a soup, salad, or appetizer…So I created these Zucchini Rolls with Marinated Zucchini, Guacamole, Tomato, and a Ginger Sauce drizzled on top.

I LOVE this crust. It’s kind of my go-to and I have this awesome blog Rawmazingto thank! It utilizes sprouted buckwheat and carrots – which I love – and has great flavor!

I always start by adding a spread of some creamy cheese on the crust. You can find a similar recipe for this cheese here (and thicken it with more cashews – omit Irish Moss and again, add more cashews if that’s more convenient).

Next, add the marinara. Please go to this previous post for the recipe. Add whatever vegetables suit your fancy (mushrooms, peppers, onions, greens, etc…) and finish with some Avocado!
