Personally, I LOVE cauliflower. But I find my body digests it best when it’s marinated and dehydrated, rather than just cooked. That’s because dehydrated cauliflower still contains the enzymes which are essential for digestion. Plus, the cruciferous vegetable retains plenty of nutrients which have been shown to decrease inflammation, ward off cancer, and support digestion.

Because cauliflower has a pretty basic (read: flavorless) flavor, it’s a GREAT vegetable to work with. And, when it’s dehydrated, cauliflower pieces get crunchy and incredibly yummy if you put the right dressing on them.

Cheesy Cauliflower Popcorn Bites (Vegan)

Crunchy and nutritious cauliflower popcorn bites. So good!

Ingredients

Scale
  • 1 small head of cauliflower, chopped into bite-size pieces
  • 1 Tbsp lemon juice
  • 2 Tbsp nutritional yeast
  • 1/2 Tbsp extra virgin coconut oil
  • 1/4 tsp paprika
  • 1/4 tsp Himalayan sea salt
  • 2 large pinches of turmeric (anti-inflammatory
  • 5 drops of liquid stevia (or a small dollop of maple syrup)
  • (optional: large pinch of chili powder)

Instructions

  1. Set chopped cauliflower aside, mix remaining ingredients in blender.
  2. Pour mixture over cauliflower and massage into the cruciferous vegetable. Make sure all pieces are covered with the marinade.
  3. Spread onto dehydrator trays with teflex sheets (or parchment paper)
  4. Dehydrate at approximately 118 degrees for 4-6 hours; stir mixture, dehydrate for another 5-6 hours until crunchy.
  5. Serve with Ranch Dressing or eat plain!
